A grab and go treat for breakfast

This week’s recipe is another oldie but goodie.

I love muffins for breakfast. They are a grab and go treat. In our busy world we don’t always have time to cook bacon and eggs for breakfast, so something to grab on the way out the door in the mornings is so nice.

I found this recipe on the back of a package of margarine. I try to read the backs of packages that I’m buying and I try to make healthier choices. Now, mind you, I don’t always make healthy choices, but I do try to keep a balance.

This recipe was supposed to be a grand prize winner in a state fair, so I thought it would be good and I gave it a try.

This one is a hit. It’s slight orange flavor with just a hint of cinnamon is really good. If you want a stronger orange flavor you can add a teaspoon of orange flavoring, or if you want a stronger cinnamon flavor you can add a little more cinnamon.

I also love the texture of this. I try to make things a little more on the healthy side, so usually I don’t add the fat most recipes calls for, I want and look for flavor, so instead of the fat and extra calories of butter, I substitute unsweetened applesauce in the same amount of the butter the recipe calls for. I love the texture it gives recipes also.

Orange Muffins

2 cups flour

1 teaspoon baking soda

¼ teaspoon ground cinnamon

½ cup of unsweetened applesauce

1 ¼ cups sugar

2 Tablespoons sugar

2 eggs

1 Tablespoon grated orange peel

1 cup butter milk

½ cup golden raisins

½ cup coarsely chopped and well drained mandarin oranges

Directions:

Preheat oven to 350 degrees.

Grease 12 cup muffin pan, or use paper cupcake holders, set aside.

In a medium bowl, combine flour, baking soda, cinnamon, set a side.

In a large bowl, with electric mixer, beat applesauce, 1 ¼ cups sugar, until well blended. Beat in eggs and orange peel. Alternately beat in flour mixture and buttermilk just until well blended. Fold in raisins and oranges. Evenly spoon batter into prepared pan. Evenly sprinkle with remaining 2 tablespoons of sugar

Bake 20 minutes or until toothpick inserted in center comes out clean .

Cool completely.
