Barbecue beef bake: a very rich recipe

I ran across this week’s recipe many years ago on the back of a Bisquick box. For me this is a very rich recipe, as far as taste, I guess it would also depend on the type of barbecue sauce you use, and it would be whatever you like. I happen to like a sweet brown sugar barbeque sauce, that’s a little tangy…Yes, I like the best of both worlds.

My family sure seemed to like it, from my husband to my son, so I found a hit and I have made this often.

When I make this recipe, I like to serve it with a salad and some rolls. It seems to offset the rich taste and it just compliments this dish.

Barbecue Beef Bake

1 lb. ground beef

¾ cup chopped onion

1 bottle (18 oz) Barbecue sauce

2 cups shredded Cheddar Cheese

2 cups Bisquick Original or Reduced fat baking mix

1 cup milk

2 eggs

Directions:

Heat oven to 400 degrees. Cook ground beef and ½ cup onion in skillet until beef is brown, drain. Stir in barbecue sauce. Spoon into an ungreased 13x9x2 inch baking dish. Sprinkle with cheese.

Stir baking mix, milk, and eggs until blended. Pour over beef mixture. Sprinkle with remaining onion.

Bake 25 to 27 minute or until crust is light golden brown. 8 to 10 Servings.
