Salad featuring cucumber, tomato and onion

Hello! This has got to be my favorite time of the year with all the fresh vegetables available.

My garden is doing well and just started to ripen the tomatoes. We have had a few from the garden, and they are so very good this year.

This week’s recipe is such a fresh tasting little side dish that I prepare every year with the vegetables from the garden.

Such a flavorful dish, it seems to go with just about anything else that I serve.

Cucumber Tomato Onion Salad

-2 medium cucumbers, thinly sliced

-4 green onions, thinly sliced (or you can use about 1/7 cup thin sliced onions)

-3 small tomatoes, sliced or chunked

-2 Tablespoons fresh parsley (optional)

Dressing

-1/4 cup sour cream (I use fat free)

-1/4 teaspoon prepared mustard

-2 Tablespoon fresh dill, minced or 1 teaspoon dried

-1 Tablespoon vinegar

-1 Tablespoon milk

-1/2 teaspoon salt

-1/8 teaspoon pepper

Whisk together dressing ingredients and pour over cucumber mixture and toss gently. Cover and chill for at least one hour. Enjoy!
