An easy, quick & economical chicken dish

With picnics, family reunions, and everyday meals, it’s hard to come up with delicious recipes that are easy, quick and economical.

It seems that sandwiches are always a welcome dish at any event, and yes, even that special Sunday dinner. It also seems like most people bring dishes that don’t include meat. This week’s recipe does just that.

I first experienced this wonderful dish when I worked in Hilliard. A friend brought it in one day just because, so we all had sandwiches. It was very good, and of course knowing me, I just had to have the recipe. She shared it with me, and I have made this many, many times. I have also changed it up and added to it.

I like this chicken dish in different ways. If you are taking it to a get-together, of course you want to take buns with you. If I’m making it at home, I like to pour it over mashed potatoes, sometimes even rice, and I have even tried it over biscuits. It’s versatile and warm and it’s a comfort dish. The flavors that come together in this dish are perfect.

Now, this happens to make a small crockpot full. You can easily cut back on the recipe and just make half, or you can also make the full recipe and just freeze it for later. I don’t think I have ever brought back anything but an empty crockpot.

It’s been a while since I made this, so I brought my little crockpot with the ingredients to work with me. I had all my ingredients with me, so I just added it all in the crockpot and turned it on low first thing in the morning. It filled the office with such a wonderful smell. By lunchtime it was ready, and yes, it brought rave reviews and I was asked for the recipe. So, I decided to make it easy and just write about it.

Crockpot chicken sandwiches

50 ounces of canned chicken (white meat) do not drain.

1 can 10.5 ounces cream of chicken soup

1 box of chicken stovetop stuffing

1 teaspoon pepper (more or less to taste)

1 can of chicken broth.

1 teaspoon garlic

8 ounces of cream cheese

Directions:

In a crockpot mix:

Chicken breast, soup, stuffing mix, pepper, garlic. cook on low for 2 hours.

Then add:

Cream cheese, cut into small pieces. Stir into the above chicken mixture and cook for another 30 minutes. Stir well to make sure the cream cheese gets mixed in thoroughly.
