Fresh tomato salad excellent for this time of year

Hello! So happy with this time of year, tomatoes are ripe, and when I look out my back window to my garden, I see nothing but red….. and that’s a good thing.

I have canned salsa and diced tomatoes so far, more to come this weekend.

One of my favorite memories is waking up with Mom and Grandma at Grandma’s house and her cooking breakfast. She would always have three different jams or jellies on her table at every meal (that’s what Grandpa requested).

My favorite was always toast with her homemade tomato butter. It tasted like fresh tomatoes sweetened with sugar. Putting that on top of the toast with melted butter, oh my gosh…. what a wonderful memory of Grandma cooking and her and Mom chatting away while I was enjoying that wonderful tomato butter. I didn’t know at that time what a beautiful memory it would become.

This week’s recipe I just had to have a tomato based one. It’s a simple little salad that’s flavorful and excellent with just about anything from cookouts to a roast.

When I first ran across this recipe years ago, it said in the heading it was “excellent for the Christmas table.” I figured it was excellent for this time of year because of all the fresh tomatoes available.

Tomato Salad

-4 medium size tomatoes

-1/4 cup cider vinegar (don’t use white vinegar, it just seems too sharp in this recipe)

-1/2 cup sugar

-1 teaspoon ground cinnamon

-1 teaspoon salt

-1/4 teaspoon ground black pepper

Remove cores from tomatoes. Slice tomatoes 1/2 thick; place in salad bowls on top of lettuce leaves.

Combine vinegar, sugar, cinnamon, salt and pepper. Spoon dressing over tomatoes. Enjoy!
